The beans grown in the islands are shipped over to Gaston’s Original Shop in Port Vila, capital city of Vanuatu. This is our showcase and we openly produce in our workshop right inside the store. So you can see every step of the chocolate making and how we pay attention to every detail….


Let’s make Fine Single Origin Vanuatu Chocolate!

We think everyone should experience chocolate in its purest form, so we’ve designed our space to keep customers at the heart of the very careful chocolate making art. They get to interact with us and witness every step of the process. We roast at low temperatures to preserve the fine flavours, then we winnow which is the removal of husks and breaking the bean to small pieces after which it’s refined and blended. Next we temper our chocolate over a 48 hours process to really achieve the blended creamy smooth flavours. Finally the process finishes with hand wrapping every bar lovingly ready for sales. We wanted our packaging to tell stories. Stories of chocolate and Vanuatu. Our labels are inspired by 19th and early 20th monetary notes, maps of the Vanuatu archipelago and drawings of the Melanesian Culture, each bar is a celebration of Vanuatu’s unique style. Our labels are locally printed colours by colours on century old monochrome presses. Our shop is a place to showcase what we love to do. We believe that beyond the discovery of chocolate crafting, there is a story to take away and a unique retail experience.
